Last year we did a lot of pruning and it paid off this year. The olive trees we treated last year were full of beautiful olives. It was also better to see, now we pruned them, that we have more varieties. Some growing in bunches and some one by one.
Since the summer was very hot, some of the ones that grow in bunches were quit small, but the ones that grow one by one were really big. We separated them so we can taste the difference if we have preserved them.

We always thought that there is a different species for green and a species for black olives, but the green ones are just unripe olives. They are therefore more firm then if they are black.
